Domaine Chavy-Chouet is a family-owned winery in the Côte de Beaune region of Burgundy, France. The Chavy family has a long history in winemaking, with Romaric Chavy, the current owner, taking over from his father Hubert in 2014. Romaric began his wine education at 12 and has worked in various vineyards around the world. The domaine produces a range of wines, including Chardonnay, Pinot Noir, and Aligoté, using sustainable farming practices and traditional vinification methods. The wines are known for their high quality and are exported to 39 countries worldwide.
History
Domaine Chavy-Chouet is a renowned winery in the Burgundy region of France, established by the Chavy family. The family has a long history in wine-making, with Alain, Jean-Louis, and Philippe all producing wine in and around Puligny-Montrachet. Hubert Chavy, the patriarch, was married to a Ropiteau, a prominent winemaking family in Meursault. Hubert sold his bulk production to top négociants but, upon his son Romaric's takeover, the family began bottling their own wine. Romaric started his wine education at 12 and apprenticed under François Mikulski before working in various regions, including South Africa, Spain, Greece, and the Languedoc. He took over the domaine at 22 after Hubert's passing in 2014. The vineyards are managed sustainably, with organic practices and minimal use of sprays.
Terroir
The terroir of Domaine Chavy-Chouet is deeply rooted in the Burgundian villages of Puligny-Montrachet, Meursault, St. Aubin, Volnay, and Pommard. The domaine's 15 hectares of vineyards, mostly old vines, are spread across these five communes, each with its unique terroir. The soil in these regions is characterized by brown limestone, clay, and marl, which contributes to the mineralic and earthy flavors in the wines. The traditional winemaking practices, such as gentle pressing, fermentation with natural yeast, and careful aging in oak barrels, also play a significant role in preserving the terroir. Romaric Chavy, the winemaker, is dedicated to respecting the terroir, ensuring that each vine is treated with care and that the wines reflect the essence of their appellation.
